Karela Masala

Karela(Bitter Gourd) is one of the healthiest vegetables in the food kingdom. You can make this dish for lunchbox. It has many names in other languages karale in Marathi, Karela in Hindi, Gujarati, and Punjabi, Tite Karela in Nepali, Karate in Konkan, Korola in Bengali etc. There are many benefits of regular consumption of bitter gourd. Such as good for diabetics, skin, hair, digestion, benefits the eyes etc. Now lets see how this healthy and Delicious dish is prepared. 

Ingredients :-

  • 250 Gram Karela(Bitter Gourd)
  • 1 Cup Chopped Onion
  • 1/2 Cup Crushed Groundnuts
  • 1/2 Cup Chopped Coriander Leaves
  • 1 Teaspoon Garlic Paste
  • 2 Fine Chopped Green Chili
  • 1/4 Teaspoon Red Chili Powder
  • 1/4 Teaspoon Garam Masala
  • 1/4 Teaspoon Turmeric 
  • 1/2 Teaspoon Cumin Seeds
  • 1/2 Teaspoon Mustard
  • 1 Lemon Juice
  • Salt 
  • Oil

Recipe :-

  1. Take 250 gram Karela (Bitter Gourd) and rinse.
  2. Then chop in small pieces like rings. Remove the seeds while chopping. If the Karela is small and tender, then these will have tender seeds and can not remove seeds.
  3. Take a bowl, then add 1 lemon juice along with karela and 1/2 teaspoon salt. Mix it well then let it marinate for 10 minutes.
  4. After 10 minutes take out chopped karela rings and squeeze between your palms. Squeeze it as much as you can. This will  help to remove some of the bitterness from Karela.
  5. Heat 1 teaspoon oil in a pan. Add the chopped karela and spread it evenly, put lid on it and saute in between. Let it cook on low flame. Make sure you do not overcook it.
  6. When Karela is cooked completely then take Karela out of pan.
  7. After that heat 3 teaspoon oil in a pan.
  8. Add 1/2 teaspoon mustard, 1/2 teaspoon cumin seed, 2 fine chopped green chili and fry it. Add 1 cup chopped onion, 1 teaspoon garlic paste and cook it till onion becomes pink on medium flame. 
  9. Add 1/4 teaspoon turmeric, 1/4 teaspoon red chili powder, 1/4 teaspoon garam masala and mix it well.
  10. Add cooked karela, 1/2 cup crushed groundnuts, salt as per your taste, 1/2 cup chopped coriander leaves and mix it well. 
  11. And again cook it for 2 minutes on low flame. 
After some time Karela Masala will be ready. You can have it with chapati or rice as per your wish.
