Veg mix is a one of the most popular Punjabi dish. This dish is a little spicy. It is a delicious and healthy veg recipe which can be eaten with Flatbreads such as Roti/Chapati, Paratha, Nan, Phulkas etc. Some people also like to eat it with rice. It is served in almost all Indian restaurant. 

Ingredients :-

  • 1 Cup Chopped French Beans
  • 1 Cup Chopped Cauliflower (Medium Pieces) 
  • 1 Cup Chopped Potato
  • 1/2 Cup Chopped Capsicum (Medium Pieces)
  • 1/2 Cup Chopped Carrot
  • 1 Cup Chopped Tomato
  • 1 Cup Green Peas
  • 1 Cup Chopped Onion
  • 1 Inch Chopped Ginger
  • 8 to 10 Garlic (Peeled)
  • 2 Green Chili 
  • 4 Cashew 
  • 1/4 Cup chopped Coriander Leaves
  • 1/2 Cup Granted Fresh Coconut
  • 1 Teaspoon Cream
  • 1/2 Teaspoon Cumin Seeds
  • 1/4 Teaspoon Turmeric Powder
  • 1 Teaspoon Red Chili Powder
  • 1/2 Teaspoon Coriander Powder 
  • 1/2 Teaspoon Cumin Powder
  • 1/2 Teaspoon Garam Masala 
  • Oil
  • Salt

Veg Mix Recipe :- 

  1. Heat oil in a pan. Add 8 to 10 garlic (Peeled), 1 inch chopped ginger, 2 green chili, 1 cup chopped onion, mix it and fry it for 1/2 minute.
  2. Add 4 cashew, fry it for a minute on medium flame.
  3. Add 1 cup chopped tomato and cook the tomato it turns little soft.
  4. Take it in the blending jar, let it cool down. Add 1/2 cup granted fresh coconut, 1/4 cup chopped coriander leaves, 1 teaspoon cream then close the lid of blending jar blend it into smooth paste.( Do not add water) take it out in a bowl.
  5. Add oil in the same pan. Let it heat on a medium flame.
  6. Add 1 cup chopped potato, 1 cup chopped cauliflower, 1 cup chopped french beans, 1/2 cup chopped carrot and stir it.
  7. Fry the vegetables on medium flame for 4 to 5 minutes. Keep stirring in between.
  8. Then add 1/2 cup chopped capsicum, 1 cup green peas and mix it. Cook the vegetables again for 2 to 3 minutes
  9. Once the vegetables are fried, then turn off the flame. Take out the fried vegetables from the pan.
  10. Turn on the flame and heat a pan. Add oil and let it heat properly.
  11. Add 1/2 cup cumin seeds and fry it for few seconds on medium    
  12. Reduce the flame to low. Add 1/4 teaspoon turmeric powder, 1 teaspoon red chili powder and mix it properly.
  13. Add the blended masala paste and mix it well.
  14. Add 1/2 teaspoon coriander powder, 1/2 teaspoon cumin powder and mix it well.
  15. Cover the pan and cook it for 2 - 3 minutes on low flame. Then open the lid and stir it.
  16. Add 1 glass of water and stir it.
  17. Add the fried vegetables and mix it well. Add salt as per your taste and mix it well.
  18. Cover the pan and cook it on low flame till the vegetables are cooked properly. It takes approx 10 minutes. Stir it in between.
  19. Then add 1/2 teaspoon garam masala and mix it well.
  20. Cover the pan and cook it for 1 minute on low flame. Then open the lid and stir it.
  21. Turn off the flame. After that veg mix will be ready.
