Veg Biryani

Veg Birayani is a lunch and dinner dish. It is tasty food. This recipe yields a perfect lightly spiced and aromatic veg biryani loaded with veggies. It only takes 30 minutes to prepare. You can make this recipe for lunch box. It is perfect meal for lunch box.

Ingredients :-

  • 3 Cup Basmati Rice
  • 3.25 Cup Water
  • 2 Chopped Onion
  • 1 Cup Chopped French Beans
  • 1/2 Cup Chopped Carrot
  • 1 Cup Chopped Capsicum
  • 1 Cup Fresh Green Peas
  • 1 tbsp Ginger Garlic Paste 
  • 1/2 Teaspoon Cumin Seeds
  • 2 Green Chili( Slit )
  • 2 Bay Leaves
  • 2 Green Cardamom( Elaichi )
  • 2 Clove ( Lavang )
  • 2 Teaspoon Shahi Biryani Masala
  • 3 tbsp Oil
  • Salt

Recipe :-

  1. Wash the rice with water well. Then soak the rice in water for 10 minutes.
  2. Turn on the flame, heat a pressure cooker pan. Add oil and let it heat.
  3. Add bay leaves, green cardamom, cloves and green chili and saute it well.
  4. Add cumin seeds and fry it for few seconds.
  5. Add onion and fry it for 2 minutes on medium flame.
  6. Add ginger garlic paste and mix it. Add french beans, carrot, capsicum, green peas. Mix it well and fry it for 2 minutes on medium flame. Stir it in between.
  7. Add shahi biryani masala and mix it. Cook it for 1/2 minutes. Keep stirring in between.
  8. Then add soaked rice ( first drain the water from rice before adding the rice to masala ) and mix it well.
  9. Cover the pan and cook it for a minute low flame without whistle. Then open the lid and stir it.
  10. Add 3.25 cup water, salt as per your taste and mix it well.
  11. Close the lid of pressure cooker. Cook the rice for 2 whistles on high flame, after 2 whistles reduce the flame to medium and cook it for 1 whistle.( For basmati rice - 2 whistles on high flame and 1 whistle on medium flame. For any other rice - 2 whistles on high flame and 1 whistle on low flame. )
  12. After 2 whistles, reduce the flame to medium. Cook it for 1 whistle on medium flame.
  13. After 3 whistles, turn of the flame and let it the cooker cool down completely.
  14. Once the cooker cool down completely, then open the lid carefully. Leave it for 2 - 3 minutes.
  15. Take it out in a serving bowl. Now vegetable biryani is ready to serve.
  16. You can garnish with onion, carrot, cucumber and serve it with raita.
