Veg Biryani
Ingredients :-
- 3 Cup Basmati Rice
- 3.25 Cup Water
- 2 Chopped Onion
- 1 Cup Chopped French Beans
- 1/2 Cup Chopped Carrot
- 1 Cup Chopped Capsicum
- 1 Cup Fresh Green Peas
- 1 tbsp Ginger Garlic Paste
- 1/2 Teaspoon Cumin Seeds
- 2 Green Chili( Slit )
- 2 Bay Leaves
- 2 Green Cardamom( Elaichi )
- 2 Clove ( Lavang )
- 2 Teaspoon Shahi Biryani Masala
- 3 tbsp Oil
- Salt
Recipe :-
- Wash the rice with water well. Then soak the rice in water for 10 minutes.
- Turn on the flame, heat a pressure cooker pan. Add oil and let it heat.
- Add bay leaves, green cardamom, cloves and green chili and saute it well.
- Add cumin seeds and fry it for few seconds.
- Add onion and fry it for 2 minutes on medium flame.
- Add ginger garlic paste and mix it. Add french beans, carrot, capsicum, green peas. Mix it well and fry it for 2 minutes on medium flame. Stir it in between.
- Add shahi biryani masala and mix it. Cook it for 1/2 minutes. Keep stirring in between.
- Then add soaked rice ( first drain the water from rice before adding the rice to masala ) and mix it well.
- Cover the pan and cook it for a minute low flame without whistle. Then open the lid and stir it.
- Add 3.25 cup water, salt as per your taste and mix it well.
- Close the lid of pressure cooker. Cook the rice for 2 whistles on high flame, after 2 whistles reduce the flame to medium and cook it for 1 whistle.( For basmati rice - 2 whistles on high flame and 1 whistle on medium flame. For any other rice - 2 whistles on high flame and 1 whistle on low flame. )
- After 2 whistles, reduce the flame to medium. Cook it for 1 whistle on medium flame.
- After 3 whistles, turn of the flame and let it the cooker cool down completely.
- Once the cooker cool down completely, then open the lid carefully. Leave it for 2 - 3 minutes.
- Take it out in a serving bowl. Now vegetable biryani is ready to serve.
- You can garnish with onion, carrot, cucumber and serve it with raita.
