Pumpkin Paratha

Pumpkin are loaded with nutrients that are great for your skin. Pumpkin is delicious, versatile and easy to add your diet.
Ingredients :-
- Wheat Flour
- 250 Gram Chopped Pumpkin
- 2 Teaspoon Ginger Garlic Paste
- 6 - 8 Fine Chopped Green Chilies
- 1/2 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- 1 tsp Garam Masala
- 1/4 tsp Turmeric Powder
- 1/4 Cup Chopped Coriander Leaves
- 8 - 10 Curry Leaves
- Water
- Salt
- Oil
How to Make Pumpkin Sabji :-
- Heat 3 tbsp oil in a deep pan.
- When oil becomes hot then add 1/2 tsp mustard seeds and let them pop.
- Add 1/2 tsp cumin seeds and let them sizzle.
- Add green chilies, curry leaves and fry it well. Then add ginger garlic paste saute it well.
- Add 1/4 tsp turmeric powder, 1 tsp garam masala and saute it. Add chopped pumpkin, salt as per your taste and saute it well.
- Add half cup water and mix it. Then cover the pan with the lid.
- Cook on the low flame till pumpkin softens.
- When pumpkin becomes soft, then add chopped coriander leaves and mix it well. After that turn off the flame. Then let it cool.
How to Make Pumpkin Paratha :-
- Take pumpkin sabji in a medium bowl and mash it well.
- Add wheat flour as per required. Mix the flour with your fingers in a circular motion. Once you feel that you have mixed it together pretty thoroughly, then knead the dough properly.
- You can knead the dough with your knuckles until it becomes soft and round. Apply some oil to dough and cover it for 5 minutes.
- After 5 minutes, knead the dough once again. Then make the small size dough balls.( I made the balls of mini orange size )
- Take one dough ball and apply the dry flour. Roll it in small size. Apply the oil on top side and fold it in half. Now again fold it in half and press it.
- After that again apply the flour and roll it. ( You can roll this into a thick paratha or thin paratha as per your choice. Here I made the thin paratha. )
- Heat a tawa and put the paratha on the tawa.
- Cook on both sides and apply oil on the top of the cooked pumpkin paratha. Then paratha will be ready after some time.
- Serve hot with groundnuts chuteny or any pickle or simple yogurt. Also serve salad as sides for this dish.
