Puran Poli Recipe
Puran Poli is a delicious dish. It is an Indian sweet flatbread. This dish of alternative names are Puran Poli, Puranachi Poli, Vedmi, Holige, Obbattu, God Poli, Pappu Bakshalu, Bakshalu, Bobbattu, Oliga. It is a popular Maharashtrian recipe. This dish is made in Ganesh Chaturthi, Navratri, Diwali, Dussehra, Holi, Gudipadava etc. You can make in any occasion or If you like this dish then you can make this dish anyday or for a change. You can eat with Katachi Amati/Kadhi/Ghee.
Ingredients of Puran Poli :-
- 1 Cup Chana Dal
- 1 Cup Sugar
- 2 Cup Wheat Flour
- Wheat Flour
- Water
- Ghee
- Salt
Ingredients of Katachi Amati :-
- 2 Cup Water of Cooked Chana Dal
- 1/4 Cup Cooked Chana Dal
- 1 Medium Chopped Onion
- 1/2 Cup Grated Coconut
- 1 tsp Red Chili Powder
- 1/4 tsp Turmeric Powder
- 1/2 tsp Coriander Leaves
- 1/2 tsp Mustard Seeds
- 1/2 tsp Cumin seeds
- 1/2 tbsp Sesame seeds
- 1/2 tbsp Fennel Seeds
- 1/2 tbsp Poppy Seads(Khaskhas)
- Chopped Coriander Leaves
- 3-4 Garlic Cloves
- 1 Inch Chopped Ginger
- Salt
- Oil
Ingredients For Kadhi :-
- 250 Gram Curd(Dahi)
- 4 Teaspoon Gram Flour(Besan)
- 1/2 Inch Ginger
- 3 Pieces Garlic
- 2 Green Chili
- 1/2 Teaspoon Cumin Seeds
- 1/4 Cup Chopped Coriander Leaves
- Curry Leaves
- 4 - 6 Groundnuts
- 3 Cloves (Laung)
- 2 Teaspoon Oil
- Salt
How to Make Puran :-
- Take 1 cup chana dal and wash it well.
- Add 3 cup of water in a cooker. Add washed chana dal and close the lid of pressure cooker.(You can add 1 tbsp cooking oil)
- Cook the chana dal for 4 whistles on high flame. After 4 whistles reduce the flame to medium and cook it for 3 whistles.
- After 7 whistles, turn off the flame and let it cool down completely.
- Once the cooker cools down completely, then open the lid carefully. Then drain the water from cooked chana dal in a bowl.
- Add 1 cup sugar in cooked dal and cook it till it turns soft and thickens on medium flame. Then strain it or grind it.(Here I strained it. You can also use puran yantra)
- After that puran will be ready. Then make small size balls of puran.
How to Make Puran Poli :-
- Take 2 cup wheat flour in a bowl. Add 1 tbsp ghee, salt as per your taste and mix it well.
- Add water to make dough. Knead the dough properly then apply some oil to dough and cover it for 10 minutes.
- After 10 minutes knead the dough again. The dough should be smooth and soft, just like paratha dough. Make the small dough balls.
- Take 1 dough ball and roll into 3 inch diameter circle.
- Put the stuffing ball in the center and seal the edges.
- Flatten it with the help of your hand, dust it with dry flour and roll it gently into 5-6 inch diameter puran poli.
- Heat the tawa on medium flame. Once tawa becomes hot then place the rolled puran poli and cook it on medium flame.
- Apply ghee on both the sides. Once cooked from both sides, take it out in the plate.
- Apply some more ghee on top of the puran poli. Similarly, make all puran poli.
- Serve hot immediately with katachi amati/kadhi/ghee.
How to Make Katachi Amati :-
- Heat 1 tbsp oil in a pan. Once oil becomes hot then add chopped onion, garlic cloves and chopped ginger then fry it till it turns golden colour.
- Add 1/2 tbsp sesame seeds, 1/2 tbsp fennel seeds and fry it for 1/2 minute on low flame.
- Add 1/2 cup grated coconut, 1/2 tbsp poppy seeds(khaskhas) and fry it till it turns golden colour.
- Add 1/4 cup chopped coriander leaves and saute it well.
- After that transfer all the mixture into blender jar. Let it cool then blend it well.
- After that vatan or masala will be ready for amati.
- Heat 3 tbsp oil in a deep pan. Once oil becomes hot then add 1/2 tsp mustard seeds, let them pop. Add 1/2 tsp cumin seeds, let them sizzle.
- Add vatan or masala and saute it well.
- Add 1/4 tsp turmeric powder, 1/2 tsp coriander powder, 1 tsp red chili powder and mix it well.
- Fry masala on medium flame for 3-4 minutes.
- When oil begins to release from sides. Add chana dal and mix it well.
- Add 2 Cup water of chana dal and stir it. Add water if required and stir it.
- Add salt as per your taste and stir it. Boil it for 5-6 minutes on medium flame.
- After 5-6 minutes turn off the flame. Katachi amati will be ready and garnish it with coriander leaves.
- Serve it with puran poli or rice.
Kadhi Recipe :-
- Take 1/2 inch ginger, 3 pieces of garlic, 1/2 teaspoon cumin seeds, 3-4 curry leaves, 2 green chili, 4-6 groundnuts, 4 teaspoon gram flour(Besan) in a blender and blend it.
- Then add 250 gram curd(Dahi) and again blend it. Then transfer the all mixture in a bowl and add water as required.
- Heat 2 teaspoon oil in a deep pan on medium flame.
- Add 3 cloves, 4-6 curry leaves and saute it. Add all mixture, 1/4 cup chopped coriander leaves and salt as per your taste.
- Then keep stirring with the spoon until the kadhi is boiled well.
- When kadhi will boiled then it will be ready.
