Kaju katli( Kaju barfi) is an Indian dessert similar to a barfi. Easy and quick recipe to make perfect kaju katli. These kaju katli have a smooth and melt in the mouth texture with mild flavors of cardamom powder.

Kaju katli is one of the most bought sweet from the Indian sweet shops during festivals and occasion. most Indian people usually gift these to friends and relatives to spread the joy of special occasions. 

Kaju katli needs only a few ingredients that are always available in kitchen.


Ingredients :-

  • 2 Cup cashew nuts, powder
  • 3/4 Cup water
  • 3/4 Cup sugar
  • 1/2 tsp Cardamom powder
  • Few saffron strands(Kesar)
  • Ghee

Recipe :-

  1. Take 2 cup cashews in mixer jar. Blend to make a powder. Do not blend it continuously. I usually blend the cashews in intervals. Sieve it and Keep aside.
  2. Add 3/4 cup water, 3/4 cup sugar, 1/2 tsp cardamom powder, stir gently and dissolve the sugar completely on medium flame.
  3. Stir it till it forms string consistency.
  4. Next lower the flame completely and add cashew powder and mix very well to ensure there are no lumps. Mix till it starts releasing from the pan.(Before adding the cashew powder, make sure sugar has dissolved completely.)
  5. Add 1 tbsp ghee and mix it. Cook continue until it gets thick in consistency.
  6. To check the desired consistency of paste. Take some paste in a spoon and let it cool.
  7. Check if it can be turned into a round dough ball then it is ready.
  8. Switch of the flame. Grease the plate with some ghee and transfer the paste to it.  Grease the butter paper or aluminium foil with ghee. Grease your hand with little ghee and knead dough for 30 seconds. Once you get smooth dough then roll the paste and place rolled ball over the butter paper. Flatten with your hand then spread some saffron strands and roll the dough with a rolling pin.
  9. Adjust the thickness according to your choice.(If silver vark available in your kitchen then you can garnish with silver vark)
  10. Cool completely  and  cut to square or diamond shape. store kaju katli in an airtight box. (You can store it in a refrigerator and eat it for 1 month.)
