Ragda patties or Ragda pattice is a delicious white pea curry served with potato patties and garnished with chutneys, onion, tomato, chaat masala, sev and coriander leaves. Ragda patties is part of the street food culture in the Indian states of Maharashtra and Gujarat. It is also served in restaurant and chaat centers. Ragda is the gravy made with white peas and pattice are potato patties. Ragda(Gravy) and potato patties are served together hence it is called as Ragda Patties.

 Ingredients for Ragda :-

  • 1 Cup soaked yellow peas
  • 1/2 tsp Cumin seed
  • 1/4 tsp Asafoetida(Hing)
  • 1/4 tsp Turmeric powder
  • 2 Chopped green chilli
  • Water
  • Salt
  • Oil

Ingredients for Patties :-

  • 2 Medium boiled potatoes
  • 1/2 Cup bread crumbs
  • 1/2 tsp Chilli flakes
  • 1/2 tsp Cumin powder
  • 1/2 tsp Chaat masala
  • 1/4 tsp Turmeric powder
  • Salt
  • Oil

Ingredients for Ragda Patties :-

  • 1/2 Cup chopped onion
  • 1/4 Cup chopped tomato
  • 1/4 tsp Rosted cumin powder
  • 1/4 tsp Red chilli powder
  • 1/4 tsp Chaat masala
  • Green chutney
  • Sweet & sour chutney
  • Chopped coriander leaves
  • Sev

How to Make Ragda :-

  1. Take a pressure cooker. Heat 2 tbsp oil in cooker.
  2. Once oil becomes hot then add 1/2 tsp cumin seeds, 2 chopped green chilli and saute it well.
  3. Add 1/4 tsp asafoetida(Hing), 1/4 turmeric powder and mix it.
  4. Add 1 cup soaked yellow peas, salt to taste and mix it well.
  5. Add water as require, mix it and close the lid of pressure cooker.
  6. Cook for 3 whistles on high flame. After 3 whistles reduce the flame to low and cook it for 2 whistles
  7. After that turn off the flame.

How to Make Patties :-

  1. Take 2 medium boiled potatoes, peel and grate it.
  2. Add 1/2 tsp chilli flakes, 1/2 tsp cumin powder, 1/2 tsp chaat masala, 1/4 tsp turmeric powder, salt to taste and mix it well.
  3. Add bread crumbs in mixture and mix it well. Then make some round tikki from the mixture.
  4. Heat 2 tbsp oil in a pan on medium flame and fry it on both sides until golden brown.
  5. Then remove patties from the pan in a plate and keep aside.

How to Assemble Ragda Patties :-

  1. Take a serving bowl, add warm ragda then add some green chutney, sweet & sour chutney and then place the patties on it.
  2. Sprinkle some red chilli powder, chopped onion and chopped tomato.
  3. Then garnish it with some rosted cumin powder, chaat masala, sev and chopped coriander leaves.
  4. Serve immediately.
