Chhole Masala/Chana Masala

Chana masala is also known as chole masala or chhole masala is a dish originated from the Indian subcontinent. The main ingredients are chickpeas, onion, tomatoes, coriander, garlic, ginger, chillies, oil and spices. You can eat with chapati or kulcha or jeera rice or steam rice.

 

Ingredients :-

  • 1 Cup Chhole(Kabuli Chana)
  • 2 Medium onions(Grind to make paste)
  • Chopped coriander leaves
  • 1 Medium tomato puree
  • 1 tbsp Ginger garlic paste
  • 1 tsp Red chilli powder
  • 1 tsp Coriander powder
  • Chhole masala
  • 1/2 tsp Cumin powder
  • 1/4 tsp Turmeric powder
  • 1 tsp Cumin seeds
  • 2 Cloves
  • 3-4 Black pepper
  • 1 Medium bay leaf(Tej patta)
  • 1 Black cardamom(Badi elaichi)
  • 1 Cinnamon stick(Dalchini)
  • Water
  • Salt
  • Oil

Recipe :-

  1. Take 1 cup chhole and wash it well, then soak 1 cup chhole(Kabuli Chana) in enough water overnight.
  2. Next day drain the water from soaked chhole and wash the soaked chhole for 2-3 times.
  3. Then add chhole(Kabuli Chana) in pressure cooker.
  4. Add 2 cloves, 3-4 black pepper, 1 medium bay leaf, 1 black cardamom, 1 cinnamon stick, 4 cup water, 1/4 tsp salt and stir it.
  5. Close the lid of the pressure cooker and cook in medium flame for 3 whistles. After 3 whistles cook it in low flame for 10 minutes.
  6. Heat 3 - 4 tbsp oil in a dip pan. 
  7. Add cumin seeds let them sizzle.
  8. Add onion paste, ginger garlic paste and saute it for 3-4 minutes.
  9. Add tomato puree, salt to taste, mix it well, cover and cook it for 5 minutes stir it in intermittently.
  10. Add red chilli powder, turmeric powder, coriander powder, cumin powder, 1/2 tsp chhole masala mix it well and saute till they start leaving their oil.
  11. Meanwhile, drain the chhole and reserve the water.
  12. Add the boiled chhole to the prepared masala and saute for 2-3 minutes.
  13. Add the reserved water as required, 1 tsp chhole masala mix it well and cook on medium flame for 5 minutes.
  14. Add some copped coriander leaves, mix it and turn off the flame.
  15. Ready to serve with plain steam rice, jeera rice or chapati or kulcha.
