Hello friends, welcome to our blog Recipes by Shraddha. Alu vadi is snack dish and it is very popular in Maharashtra. Maharashtrian have considered their food to be more austere than other. Colocasia leaves are rich in vitamin A which is essential keeping your eyes healthy. Colocasia leaves are an excellent source of vitamin C, a water soluble antioxidant. If any guest came in your house then you can be give them before dinner or lunch as a tasty starter.


Ingredients :- 

  • 1 Bunches of alu (colocasia leaves)
  • 3 - 4 tbsp Tamarind and jaggery pulp
  • 8 tbsp Gram flour
  • 2 tbsp Rice flour
  • 1 tsp Red chilli powder
  • 1/4 tsp turmeric powder
  • 1 tbsp Sesame seeds
  • Water
  • Salt
  • Oil

Recipe :- 

  1. Take colocasia(Alu) leaves and wash it then dry it. Keep aside for after use.
  2. Add gram flour, rice flour, red chilli powder, turmeric powder, salt as per taste and mix it well dry ingredients.
  3. Take tamarind and jaggery in same quantity and boil together.
  4. When it cools down then mash it and take the tamarind jaggery pulp.
  5. Add this pulp in that and add water in it as per require then mix it well. Make sure a little thick paste.
  6. Batter consistency should not so thin or thick, batter should be easily spread.
  7. First take all colocasia(Alu) leafs and cut it's stalks as close to leaf as possible.
  8. Take a leaf and roll it their back side with a rolling pin. Reduces the shallowness of the leaf, it will help for making the leaf a little flat. Make remaining colocasia leaves.
  9. After that take batter and spread it on over the leaf.(Spread the batter with the help of your hand or you can use spoon for it) 
  10. Again take a leaf and put it above the first leaf then spread the batter on over the leaf.
  11. Same process for remaining leaves and place one by one on top of the other.(If you use many leaves then you can make many layer of Alu vadi.)
  12. Fold the base part of leaves first and spread batter on it again. 
  13. Start making roll and spread the batter over each folder. Heat the 1 glass of water in cooker.
  14. Place a pot in the cooker add the 1 cup water in it then grease a plate with oil and put on top of the pot.
  15. Put the roll on the plate and make sure put the rolls sealed side facing down on the plate.
  16. Remove the whistle and close the lid then steam on medium flame for 15 minutes.
  17. Aftet 15 minutes switch off the flame and let it cool down.
  18. Cut it into vadi shape, this pieces should be thiner beacuse if you cut thin pieces then it will be crispy.
  19. Heat oil in a pan for fry. drop the vadi into oil and fry until it turns redish.(you can drop the 4 to 5 pieces into oil at a time.)
  20. Take out vadi from the oil. fry remaining pieces.
  21. Heat oil in another pan for tadka. add sesame seeds in oil and fry nicely.
  22. Place some Alu vadi in a plate and garnish with sesame tadka.(You can store in a air tight box and use for a week.)
